I've noticed that I don't get as many conversions late at night (approx 11pm - 6am).. when I'm running a campaign for consecutive days are there any repercussions or pros & cons for manually pausing a campaign during that lull.. or should this be pre-set if that is the intention.. or simply just left active for the full 24-hour period?

Those hours can be slow, for sure. But sometimes they surprise you.
I don't personally obsess on the hours. My feeling is that the algorithm needs a nice steady run in order to do it's thing and that pausing campaigns like that could mess with that. But honestly, that is just an assumption. All you can do is try it and see what happens.
But my belief is that an ad needs to perform well enough to weather a few lulls or it probably won't last long anyway. But if you have results contrary to what I'm saying, I'd love to hear about them.

thx for your feedback John.. I was also thinking that manually pausing at certain times during a campaign would mess with the effectiveness of their algorithm somehow.. particularly when running with the conversions objective where FB is doing the optimizing.
On another note, I have found that launching my campaigns on weekends don't kick off as strong when I'm targeting cold traffic.. Between Tuesday - Friday seem to be my sweetest times so far..

Yep, same here in terms of days of the week. That doesn't usually stop me from starting an ad on teh weekend if I need to get something rolling, but I see the same trend.
